why does the pizza box have instructions for "high altitudes"?
does it mean if you live in the mountains or something? wow that's crazy. i never knew that would change how you had to cook stuff haha, and i didn't know you could bake on airplanes.

- yes it does mean if you live in the mountains becuase the crust and cooking tepatures will vary
- it will say what high altitude is It is also helpful if you are cooking in an airplane IP cooked chocolate chip cookies in the C-17 on one of my trips back from the sand box
- Yea...if you live really high above sea level (in the mts.) then the air pressure is different and you need to cook everything differently
- yeah, the higher you get, the less oxygen is in the air. it affects temperatures and amounts of ingredients.
- The boiling point of water is relative to the amount of ambient air pressure. For example, in a pressure cooker you can get the boiling point of water very high because the steam pressure is trapped inside the pot. That's why food cooks so quickly in a pressure cooker. On the other hand, in a high altitude area the ambient air pressure is significantly lower, and as a result the boiling point of water is lower. http://www.csgnetwork.com/h2oboilcalc.html You can see there that the boiling point for water at 10000 feet is just over 190 degrees. This significantly changes the chemical reactions that take place inside of the food being cooked.
