why is it difficult to cook dehydrated foods at high altitudes?

- Water boils at a lower temperature in high altitudes, so you have to increase the cooking time.
- at higher elevations the pressure is greater. this means that the water will boil at a lower temperature. dehydrated food then will need to be cooked longer in the water in order for it to cook properly since hte water is cooler (relative to elevation of 0)
